Description
Our students made this wine: Michael Rousseau, Lynda Oosterhius, Chris Wells, and Rob Wohr in 2019. The students made an unconventional Zinfandel wine from "One of Washington's premier vineyards" in Walla Walla Valley, Les Collines Vineyard. Zinfandel is famous for its power structure and persistent tannins. However, this is a "feminine" and delicate wine expressing floral aromas and vibrant flavors, inviting you to share this wine or enjoy another glass!.

Wine Profile
Food Pairing Notes:
This finesse wine is supple with fragrant and fruit--driven aromas. This wine is perfect with unconventional pairings such as a piece of fish with delicate sauces, great for salads, and friendly with soft cheeses and Stews, wild mushrooms, and root vegetables.

Overall, temperatures across the growing season were slightly above 20-year averages, not as the highest temperatures exposed it before. The cold temperatures delay the ripeness of the grapes of this grapes. Therefore, it creates a lighter style of wine.
Tasting Notes:
The Zinfandel smells like perfume on the nose with aromas of cranberries, fresh raspberries, and pomegranate fruit. Acidity blends into the wine's great structure and light, silky, soft tannins—bright fruit flavors of mint, crush fruits, and subtle notes of peppery & Christmas spices.
