Description
Student Winemakers: Keith, Lindsay, Coco, and Daniel E. introduced this Malbec picked from our vineyards, located by the airport area in the Walla Walla Valley. Our estate vineyards are at the heart of the student learning experience. The Stan Clarke and Myles Anderson estate vineyards encompass six planted acres with 16 varieties. All vines are planted, maintained, and harvested by students who put the philosophy of “wine-growing” into practice. Our student viticulturists utilize precision agriculture tools to develop irrigation and nutrition plans directly connecting grape growing to quality winemaking. Conventional, organic, and biodynamic methods utilised to teach the full spectrum of management techniques.

Food Pairing Notes:
The favorable growing conditions allowed for a Malbec wine with richly layered flavors to pair with pronounced, elegant, and earthy dishes such as filet mignon, french beef, and potato pure, cheese boards, beef pastries, persistent sauces, mushroom pie.
Production Notes:
The students decided to use different techniques in this wine, such as "Macro Oxygenation." This method sounds complicated, but it refers to how oxygen can be applied to the fermentation of the wine. Oxygen interacts with both the yeast and the wine/must so that yeast health is improved, fermentations encounter fewer problems, and the resultant wine quality is often more approachable with fresher aromas and tastes than it had been previously. The wine was aged into Neutral French barrels, 225 L & a New BBL puncheon, 500 L.
Tasting Notes:
The ripening grapes with appealing black fruit flavors marry fruit, sweet vanilla, spicy oak, and tannin in a harmonious balance. The wine is spicy with perfumes of black cherries, preserve wine plums, violets and Christmas spices.
Vintage Notes:
The Malbec grapes were harvested on 10/2/ 2018. Malbec tends to be an early-ripening grape ripening. This vintage was another timeline, and it was marked as "ideal weather" during the harvest season due to the warm temperatures. Warm days and cooler nights helped preserve acidity and develop moderate tannins of the Malbec Grapes in a silky-smooth stage.
