Student Winemakers: Nichol decided to bring this beautiful wine to our wine list at the Walla Walla Community College. Our estate vineyards are at the heart of the student learning experience. "Jon Cockburn Ranch Vineyard is located in the Southeast corner of the valley, in the foothills of the Blue Mountains. One hundred fifty plantable acres in well-drained, deep, silty loam. Elevation 1100 - 1300 ft., row orientation east-west, spacing 9x4 feet. Varieties: Barberra, Cabernet Franc, Cabernet Sauvignon, Chardonnay, Dolcetto, Grenache, Malbec, Merlot, Mouvedre, Nebbiolo, Petit Verdot, Roussanne, Sangiovese, Syrah, Tempranillo and Viognier".

Food Pairing Notes:
The Cockburn Syrah was made in a light style. The wine pairs very with soft meats accompanied with soft potatoes or daily homemade cooking. This wine is versatile, and the low tannins are meant to drink the wine now. Delicate, generous, and pleasant.
Production Notes:
The Cockburn Syrah was destemmed and a small percentage of foot-step Viognier was blended to the wine to stand out the flowers and aromatic flavors to this time. The wine was fermented in a Radoux, French Puncheon, and American Oak.
Tasting Notes:
The Cockburn Syrah wine has a floral bouquet with a good backbone of acidity. The wine is spicy with blackberry perfumes aromas and flavors of cherries and violets, balanced with an earthy flavour characteristic of the soils that belong to the Milton- Free Water—bright fruit-tasting notes and beautifully complemented with a smooth finish.
