Wine Profile

Food Pairing Notes:

The Chardonnay Wine is versatile and perfectly pairs with mild and creamy cheeses, including Brie, ricotta, cream cheese, Camembert, Chevre, Roquefort, and gorgonzola. The complexity of the Chardonnay engages with meats with mild sauces, which is an excellent way to start or finish a meal.

Production Notes:

This Chardonnay was blended with other grape varieties to round the mouthfeel of this wine. A small percentage of Aligoté grape, "known as the third grape in Burgundy", adds hints of floral aromas and "thick texture to the wine.. Either a small percentage of Riesling grape with slightly candied ginger fruit. The new oak was well integrated into this wine, but it didn't overwhelm the tropical and stone flavors on the palate.

Tasting Notes:

The creamy texture balanced by an earthy and stone minerality, undertones of herbaceous Thai basil and green apple, pineapple, peaches and chamomile with a pleasant pleasing finish of buttery cookies and ripely flavored passion fruit cream.

Vintage Notes:

The 2021 vintage was an extended growing season with extremely high temperatures in June that reduced the low yields for some of the vines. The canopy management was treated with inside leaf removal to create more aeration and prevent diseases, while the leaves on the outside were protected from sun
