Description

Students and faculty produce College Cellars at the Walla Walla Institute for Enology and Viticulture. With access to cutting-edge technology and training in honored techniques, they craft wines that express the vibrancy of Washington and its winemaking community. This aged tawny-style wine was bottled from the oldest barrels in our "Solera System", a series of 3–9 barrels are used, and the method involves moving the wine down from one barrel into the next one.

Food Pairing Notes:

We highly recommend aging this wine! This concentrated wine will pair perfectly with stinky blue cheese or any dessert, especially with nutty flavors and caramel sauces. Unconventional pairings, such as meats with mushroom or soy sauces, will also be great.

Production Notes:

The Port Style wine comes traditionally from the Douro River Valley in Portugal. The traditional grapes are Touriga Nacional, Tinta Roriz (Tempranillo), Tinta Cão, Tinta Barroca, and Touriga Franca. However, we decided to make this with Barbera Grapes that were donated from Ciel Du Cheval Vineyard, located in Red Mountain. This port is traditionally adapted for foot treading grapes from our students, and you are welcome to dance with us!.

Tasting Notes:

The Tawny Dessert wine is crisp and luscious, exhibiting vibrant sweet spices such as cloves, cinnamon, flavors, and hazelnuts layered with aromas of orange peel. The acidity of the barbera grapes used in this wine creates a perfect balance within the sweetness of this dessert wine.
