Winemaker Students: Jeff, Peter, Brian, Rob The 2019 Joseph Christhy Syrah is very special to us. The grapes come from the Joseph Christhy Vineyard, located by the Horse Heaven Hills AVA near the small community of Plymouth, WA. "We’ve chosen our grape varieties carefully based on these unique soil and climate conditions, developed exacting standards for vineyard management and collaborated with the best consulting winegrowers in the region to produce ultra-premium wine that comes unmistakably from this place. We are grateful for the expertise and guidance of our consulting winemaker". Charlie Hoppes. The grapes for this wine were grown by program graduate Denis Hyatt. Harvested 09/13/19 100% whole cluster foot stomp, added KMBS and Tartic and let it run

Food Pairing Notes:

the high quality of the wine provides for a wide range of food pairings. The earthiness, funkiness, and great extraction of this wine will pair perfectly with earthy vegetables as potato, variety of mushrooms, beets, asparagus and mediterranean cuisine.

Production Notes:

The Vessels used in the production of this wine were, Puncheon 500L, and a Radoux Neutral French Oak barrel. Two Punching downs daily during primary fermentation to extract a little bit more the flavour profile of the wines and finally pressed in a traditional Basket press. Different fractions were used into this blended Joseph Christy Syrah wine.

Tasting Notes:

The earthy notes characteristic of the soils profile and propped by mouth-watering tannins and acidity. The Blackberry fruit, marries fruit, oak, and tannin in a harmonious balance.Favorable growing conditions allowed for a wine with richly layered flavors of huckleberries, black plum aged jam, blackberries, black figs and dates.

Vintage Notes:

The grapes for this wine were grown by program graduate Denis Hyatt and harvested on 09/13/19 with a 100% whole cluster foot stomp.Using this maceration method, he fermentation going quicker and adds to the intensity used in traditional wine-making.
