Description

A light crop and a hot summer led to a record early harvest. We scrambled to get the winery ready, and on August 20 we were crushing delicious Sauvignon Blanc grapes. We harvest each block individually, trying to capture some fruit at the early stages of ripeness and other fruit at the later stages. This is the first step to creating our layered house style of Sauvignon Blanc. Our winemaking recipe also calls for gentle whole-berry pressing, a cool and oxygen-limited fermentation protocol, and a fine turned mix of specialized yeast strains to guide the fermentation.
