Description
It is no secret to Lodi winemakers that the best cabernet in the appellation is grown on the eastside of town. We carefully select the fruit we use for Concrete Cabernet Sauvignon from “East Side” vineyards with sandy, well-draining soils that produce small yields and high quality grapes.

Food Pairing Notes:
Concrete Cabernet Sauvignon pairs beautifully with juicy grilled steaks and other red meats, hearty beef stew, pasta with meat sauce and Lamb Osso Bucco.
Production Notes:
Our grapes were hand harvested at 26.1 Brix, destemmed and crushed, and then went through the Flash Détente process for intense extraction of tannins and color. Next, the grapes were separated into three lots and each was fermented separately. The first lot was fermented in French Oak barrels to achieve a round mouthfeel and softer tannins. The second lot was fermented in 75 year old concrete tanks which add fullness and body along with bigger tannins.The third lot was fermented in stainless to retain the fruity character of the grapes. After primary fermentation was complete in the concrete and stainless steel tanks, we immediately transferred the wine into new French Oak barrels for aging. The wine was then aged for 14 months.
Tasting Notes:
This Cabernet Sauvignon has a beautiful deep purple and inky color. Lush and firm in the style ofthe vintage made with 100% Cabernet Sauvignon. Blackberry jam, currants and cassis notes are well balanced with firm tannins. The influence of French oak barrels during aging adds a sweet toast and caramel notes.
