Production Notes:
Our estate-grown reserve Cabernet Sauvignon is 85% Cabernet Sauvignon and 15% Tempranillo. We grow three clones of Cabernet Sauvignon and two clones of Tempranillo. The Cabernet Sauvignon vines are on a bi-lateral cordon trellis system, while the Tempranillo vines are head-trained in the traditional shrub manner. We harvested the grapes on October 4, 2016: the Cabernet Sauvignon at 3.4 pH and 26.9 brix; the Tempranillo at 4.0 brix and an averaged 26.7 brix. The wine spent 2 years and 7 months in neutral oak barrels with 20% new French. It was bottled in May 2019 and released in May 2021. We made just 81 cases of this wine.
